Tis was the night of Halloween, a cold wind blew outside, as the clock struck midnight, the Monsters' sweet tooth set in. They scoured the kitchen with no restraint to see what they could make to satisfy their craving, when one of the Monsters gargled "Cookies!" Could it be? Could they make ever so delicious, oven baked cookies without the two crucial ingredients butter and eggs? The Monsters looked at each other with frightened eyes, without any words at all, they proceeded knowing they were about to attempt the unimaginable. Monster #1 shouted for the ingredients as Monster #2 delivered, splashing and swirling emitted from the kitchen, like some sort of magical potion was at play. Then everything stopped, at if time ceased to exist, the long awaited cookie dough sat there on the countertop, both Monster's eyes peered over the edge of the shiny bowl, only to find the dough glaring back. Monster #1 exclaimed "Yes! That will have to do". What came out of the oven, was so preposterous it just might be real. The soft, warm cookies were hastily devoured by the Monsters whom created them in the night!
For the recipe:
1 1/2 cup all purpose flour
1 cup applesauce (unsweetened)
1 cup brown sugar
3/4 cup coconut flakes
3/4 cup oats
1/2 cup cane sugar
3 tbs coconut oil
1 tsp kosher salt
Instructions
1. Preheat oven to 350 degrees F.
2. In a bowl, add all the dry ingredients: flour, both sugars, oats, coconut flakes, and salt, then mix.
3. Add applesauce and coconut oil, mash the ingredients together until dough forms.
Our applesauce has a dash of cinnamon from when we canned it, feel free to skip or add into the recipe.
It's okay if the coconut oil is not melted, work together with your hands or use a potato masher (because your not really sure why you bought that kitchen utensil again).
4. Shape dough into spoon-sized balls and place onto a greased cookie sheet.
5. Cook for 15-18 minutes, remove when golden.
Recipe yields approximately 12 cookies.
